Take Advantage Of The Summer Garden

One of the best things about August is the fresh produce coming out of your garden or the local farmers market. I love to can and try new recipes. It's time to try new flavors and I wanted to share this favorite recipe of mine to enjoy.

Sheet Pan Garden Breakfast Hash

Total Time 40Mins

Ingredients 

  • 3 tablespoons butter
  • 1 medium onion
  • 1 medium summer squash cut into cubes
  • 1 medium zucchini cut into cubes
  • 3 medium potatoes cut into cubes
  • 3 ears of sweetcorn husks and silk removed and kernels cut off the cob
  • 6 strips of bacon or turkey bacon cooked and diced into pieces
  • 5 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded cheddar cheese 
  • garlic salt, salt, pepper to taste

Instructions

1. Preheat oven to 400F. Line pain with tin foil. Spray with non stick cooking spray. Place butter on the pan and place in oven for a few minutes until butter is melted.

2. In a singe layer arrange onion, squash, zucchini, potatoes, and corn. Season to taste. Roast at 400F for 25 to 30 mins until vegetables are tender turning once thru the baking process. 

3. Remove from the oven and sprinkle with bacon and crack the eggs on top. Return the pan to oven for an additional 10 mins.

4. Remove pan and sprinkle with your Parmesan and Cheddar Cheese and place back in the oven for an additional 5 mins to melt cheese.

Serve hot and enjoy!
