A Year Later. Rising Above It All! Also A Protein Favorite Recipe

It's been a year now since the Covid fog descended upon us. So much of our lives disrupted and our daily lives turned upside down. We are now over a year and so many things like masks and social distancing have become daily living. I don't want this blog to be a downer but more of a rise above it ALL!  I asked our fans to send in their stories of how they rose above it all and I am so happy to share them with you. 

My friend Bobbie began collecting reading classics. Not just the books but collector items. Leather bound and gold trimmed pages. She said "They bring me joy every time I open them, to see a classic so honored. I will pass them on to my daughter"

My friend Alyssa began on Instagram with several baking challenges. Homemade bread, pies, casseroles, and many more. A new one every week. She still does them! She said "They make me feel not so isolated and who would have known? I love to cook!"

Myself? I have taken up the solitude and peacefulness of bike packing. Just load everything on to your bike (or in my case a child's bike trailer) and go. Camping along the route. I never would have thought I would fall in love with this. It is something I will continue to do,

My point is this virus has changed us all. Hopefully in this chaotic world we have been thrust into you have found your new fun stuff. I would love to hear more about it. Please drop me a line with yours,

 

 

 Protein Powder Pancakes
These are a yummy twist to a breakfast favorite. I use these are a pre or post workout fuel. I also freeze them a fuel on my long bike rides. Enjoy!
Ingredients
  • 2 cups oatmeal
  • 1 over ripe banana
  • 3 eggs
  • 3 teaspoons baking powder
  • 2 tablespoons flax meal
  • 2 scoops cinnamon roll protein powder or you can use vanilla.
  • 1/2 teaspoon vanilla extract
Combine all the dry ingredients into a food processor to make a flour consistency. In a separate bowl crush the banana and then add eggs and mix. Then mix your dry ingredients in. Mix super well. Heat your skillet with coating spray. On medium heat cook the pancakes 2 minutes on each side until brown on both. I love to coat them with some peanut butter or put them in my pocket for long rides.
